Locals enjoy a dish called Harbin Hongchang, or “Red Sausage”, which is similar to Eastern European smoked sausage and made with coarsely ground pork, garlic, black pepper, and other spices. Russian borscht is another favorite winter comfort food in Harbin, served in many of the city’s popular restaurants.
